Apple-Less Pie

Prepare pastry for 2 crusts. Line pie pan with 1 crust and pour in filling.

Filling:

  • 1-1/2 cups sugar
  • 2 heaping tsp cream of tartar
  • 2 cups water
  • 22-25 Ritz crackers
  • Slices of butter
  • Sprinkle of cinnamon

Put sugar, cream of tartar and water in a large pot and bring to a boil. Add crackers, stir but do not mash, for 2 minutes. Pour into crust; put slices of butter on top. Sprinkle cinnamon on top and cover with other crust. Prick top and bake in 400 degree oven for 35 minutes.
