Favorite Fresh Fruit or Berry Pie
- 1 (3 oz.) package strawberry jello
- 3/4 cup boiling water
- Whipped cream for topping
- 1 baked 9-inch pastry shell
- 4 cups ripe fresh strawberries, washed, drained, sweetened and chilled. (May be sweetened with sugar or an artificial sweetener)
Dissolve the jello in the boiling water. Quick-cool over ice water, stirring often, until thick syrupy mixture is almost ready to set; pour over chilled, sweetened berries; blend carefully so all berries are coated. Pour gently into chilled baked pie crust. Chill completely. Serve topped with sweetened whipped cream. Use any berry or fruit of your choice. (Fresh pineapple won’t work, that would have to be canned.)
