Coconut Cookies

  • 1/2 lb butter or margarine
  • 2 cups flour
  • 1 tsp vanilla
  • 1/4 cup sugar
  • 1-1/2 cups shredded coconut
  • Powdered sugar

Put all ingredients into a bowl and mix with hands. Divide into 4 (1-inch) rolls and chill. Slice 1/4-inch thick. Bake on ungreased cookie sheets in 325 degree oven for 15 minutes. While still warm, roll in powdered sugar.

Yield: About 10 dozen cookies
