Macadamia Nut Cookies

  • 1 cup butter or margarine
  • 1-1/2 cups sugar
  • 3 cups all-purpose flour
  • 1-1/2 tsp vanilla
  • 2 eggs
  • 1 cup sliced thin macadamia nuts
  • 1 cup oatmeal
  • 1/2 tsp salt

Sift flour and salt together. Cream butter and sugar; add 2 whole eggs, one at a time. Add sifted flour and salt into dry ingredients, 1 cup nuts, 1 cup oatmeal, and toss around to blend well. Stir dry ingredients into the creamed mixture and drop dough on cookie sheet with a teaspoon. Flatten with fork dipped in water to prevent sticking. Bake in slow oven at 350 degrees for 10-15 minutes. Watch closely.
