Walking Lomi Salmon

  • Cherry tomatoes
  • 1 small round onion, minced
  • several stalks of green onion, sliced very thin
  • 1 lb. salt salmon

Soak salmon for at least 3 hours, changing water frequently. Shred meat from skin and bones. Cut off and discard tops of cherry tomatoes. Scoop out the seeds and pulp with a demitasse spoon. Combine with round onion, green onion, and salmon. Refill tomatoes with mixture and serve cold.
