Tekka Miso (Fried Miso with Gobo)

  • 1 tablespoon vegetable oil
  • 1/2 cup gobo, shaved (like in sharpening a pencil)
  • 2 tablespoons shredded shrimp or katsuobushi
  • 1 teaspoon grated ginger
  • 1 1/2 tablespoons sugar
  • 1/4 teaspoon gourmet powder
  • 1/2 cup miso

Sauté gobo in oil until it looks clear and transparent. Add rest of the ingredients and cook over slow heat stirring constantly, until well-cooked and blended.

After removing from heat, add 2 tablespoons pan roasted sesame seeds, or ono mi.

Tekka miso keeps well in a covered jar in the refrigerator. Most delicious with hot rice or ochazuke.
