Sweet Potato (Hawaiian Style)

  • 5 to 6 cups mashed sweet potato
  • 1/3 cup cream
  • 1/2 tsp. salt
  • 2 tbsp. butter
  • 1 1/2 cups crushed pineapple
  • 1 cup sugar
  • 1 1/2 cups grated coconut

Cook sweet potato and mash. Add cream, salt and butter. Cook the crushed pineapple and sugar in saucepan for about 10 to 15 minutes. Put 1/3 of the potato in casserole top with pineapple followed by a layer of potato and pineapple. (There should be three layers of each.) Top with coconut. Bake till brown (approximately 20 to 40 minutes) in 350° oven.
