Sweet Potato Cake
- ½ cup fat
- 1 cup sugar
- 2 eggs
- 1 cup mashed sweet potatoes
- ½ cup milk
- ½ cup chopped nuts
- 2 cups flour
- ½ tsp. salt
- 2 tsp. baking powder
- ¼ tsp. soda
- ½ tsp. each cinnamon and nutmeg
- ¼ tsp. cloves
Cream the fat; add sugar and cream well. Add eggs one at a time, beating well after each. Add sweet potatoes; mix well.
Sift together the dry ingredients; add alternately with milk to the sweet potato mixture, beginning and ending with dry ingredients. Add nuts last.
Bake in a greased 9 x 9 inch loaf pan in a moderate oven (350°F.) 45 to 50 minutes. This is good served fresh un-iced, or you may frost with any frosting.
