Sweet Potato Balls

  • 2 cups cold, cooked mashed sweet potatoes
  • 1 egg yolk
  • 1/2 tsp. sugar
  • 8 marshmallows
  • 2 cups cornflakes
  • 1/2 tsp. salt
  • 4 tbsp. melted fat

Combine sweet potatoes, egg yolk, salt, sugar and 2 tbsp. melted fat. Divide into 8 portions, then flatten each portion and place a marshmallow in the center. Fold the sweet potato up around the marshmallow, leaving a small opening at the top. Crush the flakes very fine and combine with the remaining 2 tbsp. melted fat. Roll the sweet potato balls in the cereal crumbs, then place on pie pan. Bake at 350° for about 15 minutes. If desired, they may be fried in deep fat heated to 390°.
