Sunny Punch
- 4 cups water
- 3 cups unsweetened pineapple juice
- 1 6-oz frozen orange juice concentrate, thawed
- 1 6-oz can frozen lemonade concentrate, thawed
- 2 4/5-quart bottles champagne, chilled
- Orange slices and mint leaves
Combine water, pineapple juice, orange juice concentrate and lemonade concentrate. Stir well. Chill thoroughly. Just before serving, transfer to punch bowl; carefully pour champagne down side of bowl. Stir gently to mix. Garnish with orange slices and mint leaves, if desired.
Yield: 5 quarts punch
NOTE: Instead of using ice, freeze wedges of fresh oranges or lemon to float atop the punch.
