Su Renkon (Lotus Root with Vinegar Sauce)

  • 1 section renkon (lotus root)

Peel renkon and slice thin.
Mix ingredients for sauce and bring to a boil. Add renkon and cook 3 to 4 minutes until renkon is clear and transparent.

FOR VARIATION: Slice 1 medium carrot in thin slices. Parboil. Add to renkon and cook as directed above. A few slices of ginger or lemon rind added to the sauce will improve flavor.

Sauce:

  • 1/4 cup vinegar
  • 2 tablespoons water
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon gourmet powder
