Stuffed Chikuwa

  • Chikuwa
  • Japanese cucumber (choose one that will fit into hole of chikuwa)

Cut chikuwa into 2 or 3 pieces to avoid breaking it. Stuff hole with cucumber. Refrigerate until ready to serve. Slice and arrange on platter.

VARIATION: Stuff with kim chee, tsukemono, fully cooked weiners, or softened cream cheese mixed with chopped green onions.
