Strawberry Gelatin Cream Pie

  • Yield: two 8-inch pies
  • 2/3 c sugar
  • 3 c milk
  • 3 eggs, medium
  • 1/4 t salt
  • 5-1/2 T cornstarch
  • 1 t vanilla
  • 1 T butter
  • 1 box strawberry gelatin, 3 oz.
  • 1 btl whipping cream, 8 oz.
  • 2 pie shells baked

1. Heat sugar and 2-1/2 cups milk in a double boiler.
2. Mix 1/2 cup milk and cornstarch. Pour into hot milk mixture and stir continuously until thickened.
3. Add beaten eggs to thickened mixture.
4. Blend in vanilla and butter. Set aside and cool.
5. Pour into shell and chill.
6. Dissolve gelatin in 1 cup hot water.
7. Add 3/4 cup ice water. Chill until slightly jelled. Pour gelatin on pudding.
8. Top with whipped cream.
