Sponge Cake

Sift:

  • 1 cup sugar

Grate into the sugar, then stir in:

  • Rind of 1 lemon

Beat until very light:

  • 6 egg yolks

Add the sugar gradually, beating constantly. Add:

  • 3 tbsp. lemon juice and 1 tsp. water

Beat these ingredients until blended.

Whip until stiff but not dry

  • 6 egg whites
  • ¼ tsp. salt

Fold lightly into yolk mixture until partly blended.

Sift:

  • 1 cup cake flour

Fold flour into cake batter 1 tbsp. at a time. When blended pour batter into ungreased 9 inch tube pan. Bake at 325 degrees for 1 hour.
