Spam and Eggs Breakfast Lasagna

- 1 can Spam, diced and fried crispy. Drain on paper towel.
- 1 medium round onion, chopped
- Half container (or more if desired) fresh mushrooms, sliced and/or diced (or canned mushroom may be used)
- 1 can cream of mushroom soup
- 1 can beef or chicken broth
- 12 lasagna noodles, cooked and drained (approx. 10 minutes)
- 9 hard-boiled eggs, sliced (I slice eggs using an egg slicer as I layer them)
- Black pepper as desired
- 1 pkg. Swiss cheese
Preheat oven to 350 degrees. Butter or spray an 8×8″ baking dish.
Saute’ onion until transparent. Add chopped mushrooms. Stir in cream of mushroom soup and broth. Heat. Add black pepper. Remove from heat. (This is the sauce.)
Spread a thin layer of sauce onto the greased baking dish and layer as follows: 4 noodles, 3 sliced hard-boiled eggs, 1/3 of the Spam, 4 slices Swiss cheese (OK to add more to use up package of cheese), add about 1/3 of sauce. Repeat layers two more times.
Bake uncovered about 45 minutes or until bubbly. (Check the last few minutes often to make sure top does not burn.) Let stand a little while to set and then serve.
This dish can be assembled the night before.
Suggested other choices of meat: chopped cooked turkey or chicken, crispy fried bacon, canned tuna, pork sausage (mashed and fried, or other breakfast sausages), diced cooked ham.
