Shrimp on Toast
- 2-3 pounds shrimp, cleaned and deveined
- 1 can (12 oz.) luncheon meat
- Chinese parsley
- 2 eggs, beaten
- 1 loaf day old bread
- Oil for deep frying
Mince shrimp, luncheon meat, and parsley very fine (or use blender or food processor). Add eggs and mix well. Spread shrimp mixture on bread and fry in hot oil heated to 350°F., shrimp side down, until brown on edges. Turn and continue frying until both sides are brown. Remove from oil and drain on paper towels. Cut each slice of shrimp toast into 4 triangles and serve immediately or keep in 250°F. oven until ready to serve.
Note: Shrimp toast may be made ahead of time and kept frozen. To serve, reheat in 450°F. oven 6-8 minutes.
