Sherry Rounds
- 1/2 cup butter or margarine
- 1 cup sifted powdered sugar
- 1/2 tsp vanilla
- 3 Tbsp sherry
- 1½ cups sifted flour
- 1/4 tsp salt
- 1/2 cup finely chopped almonds, toasted
- 1 slightly beaten egg
- 2 Tbsp water
- Red and green sugar crystals
Cream together butter, powdered sugar and vanilla till fluffy. Stir in sherry. Sift together flour and salt; add to creamed mixture. Stir in almonds. Flatten dough between two sheets of waxed paper; roll to about 1/4-inch thickness. Remove top sheet of waxed paper; cut dough with scalloped round cookie cutter. Place on ungreased cookie sheet. Combine egg and water; brush lightly over tops of cookies. Sprinkle with red and green sugar crystals. Bake in 375 degree oven for 12-14 minutes or till lightly browned.
Yield: 3 dozen rounds
