Scones, Kahala Mandarin Oriental Hotel

- 14 oz. sugar
- 2 lb. butter
- 2 Tbsp. baking powder
Cream till combined.
- 4 lb. all-purpose flour
- 1 lb. dried cranberry or other types of dried fruits or nuts
Add to above and mix till blended. Do not overmix!!
- 8 fresh eggs
- 1/2 c. buttermilk
Mix together and add to the rest of the mixture. Mix till blended and do not overmix!!
Refrigerate 1/2 hour. Flatten to 1 inch. Flour for dusting will help in cutting, cut with desired size cutter. Place on pans, egg wash tops of scones, sprinkle with granulated sugar or cinnamon sugar for flavor.
Bake at 360-375 degrees for 20-25 minutes until tops are nicely browned.
