San Bai Zuke #3

  • 3 large daikon
  • 2 large cucumber
  • 1 small carrot
  • 1 medium egg plant
  • 1 medium hasu (sliced and boiled)
  • ¾ tsp. ajinomoto
  • Sesame seeds

Syrup:

Boil together:

  • 1 cup shoyu
  • 2 cups brown sugar
  • ½ cup vinegar
  • Small piece ginger
  • Small hot pepper

Slice the vegetables thin, put in a pan and salt with ¼ cup Hawaiian salt. Leave about half day, mix or rub 2 or 3 times at intervals. Then squeeze or drain well. Add boiled, cooled syrup and hasu, (lotus root) ajinomoto and sesame seeds.
