Rice Pudding

1 cup left over rice

Add 3 cups water, let rice cook real well, if needed add more water, then when about dry, add 1 cup milk

½ cup sugar

2 egg yolks, beaten a little with spoon and

add ½ teaspoon lemon extract

Beat 2 egg whites stiff

Add 2 tablespoons sugar while beating

When stiff fold into rice mixture, stirring well

Pour into serving dishes and sprinkle top with nutmeg, chill.
