Potato Donuts
- 1 cup hot mashed potatoes
- 1 cup sugar
- 1/2 tsp. salt
- 2 eggs, beaten
- 3 tbsp. melted butter
- 1/2 cup milk
- 1-3/4 cups sifted flour
- 2-1/2 tsp. baking powder
- 1/4 tsp. nutmeg
- Fat for frying
Combine the mashed potatoes, sugar and salt in a bowl. Mix well. Add eggs, melted butter and milk, beating until very light and fluffy. Sift flour, baking powder and nutmeg together. Add to potato mixture. Knead into a dough. Roll out 1/8 inch thick on a lightly floured surface. Cut out with a doughnut cutter.
Heat the fat to 360 degrees. Drop the doughnuts into it carefully. Do not fry too many at once. Fry until lightly browned on both sides. Drain. Dust with sugar before serving. These are especially good hot.
