Plantain Spiders (Arañas)

  • 3 green plantains or green bananas
  • Vegetable oil
  • Salt or Goya Adobo, to taste

Peel plantains. Set aside in water. Grate them on the coarse side of the grater. Add salt or adobo. Scoop up portion in a large slotted spoon. Drop a few at a time in 1 to 2 inches of 350° vegetable oil. Be cautious with splattering oil. Drain on absorbent paper and serve as an appetizer or side dish.
