Pipikaula (Hawaiian Dried Beef)

  • 1 lb. flank steak

Marinate in one of the following marinades:

MARINADE #1:

  • 1 Tbsp. Hawaiian salt
  • 1 Tbsp. water
  • 2 tsp. sugar
  • Drop of liquid smoke

MARINADE #2:

  • 1/4 tsp. chopped chili pepper
  • 1 clove garlic, crushed
  • 2 tsp. sugar
  • 1 Tbsp. Hawaiian salt
  • 1 tsp. cider vinegar
  • 1 Tbsp. pineapple juice

MARINADE #3:

  • 2 Tbsp. soy sauce
  • 1 Tbsp. sugar
  • 1 tsp. ginger juice or 1/2 tsp. ginger powder
  • 1 clove garlic

Pound beef with back of knife blade, or a mallet to tenderize. Cut into 2 inch strips, then marinate for 2 hours. Place beef on roasting pan rack to dry in sun or in oven at 175° for about 5 hours. Broil or pan fry. Slice and serve.
