Pineapple Molded Salad

  • 1 can (No. 2) crushed pineapple
  • 1/2 cup sugar
  • Juice of 1/2 lemon
  • 2 pkg. Knox gelatin
  • 1/2 cup water
  • 1 cup American cheese, grated
  • 1 carton (8 oz.) small-curd cottage cheese
  • 1 bottle Avoset whipping cream (do not whip)

Combine pineapple and sugar; heat until it boils. Let boil for 1 minute, then turn heat off. Add lemon juice.

Dissolve gelatin in water, add to first mixture, and refrigerate. When mixture begins to set, add remaining ingredients and stir. Pour into oiled mold.
