Pineapple Date Bars

  • 1 c. butter or margarine, melted
  • 2 c. sugar
  • 4 eggs, well beaten
  • 1 c. crushed pineapple, drained
  • 1 c. unroasted macadamia nuts
  • 1 pkg. dates, cut fine
  • 1 1/2 c. flour
  • 1/2 tsp. soda
  • 1 tsp. salt

Pour melted margarine over sugar, mix well. Add well beaten eggs, mix and blend. Add drained pineapple, chopped nuts, and dates, mix. Add dry ingredients which have been sifted three times. Pour into greased pan 8 x 11 1/2 x 2-inches which have been lined with waxed paper – or use Pam.
Bake in oven, 350 degrees, 50 to 55 minutes or until done. Slice in blocks while still warm. Roll in sugar (powdered).
