Pineapple-Cottage Cheese Salad
- 1 pkg. lemon flavored gelatin (jello or royal)
- 1 pkg. lime
- 2 cups liquid (pineapple juice plus water)
- 1 can No. 2 crushed pineapple
- 1 cup cottage cheese
- 1 cup mayonnaise
Squeeze pineapple (not too hard). Measure juice (about 1¼ cup). Add water to make 2 cups liquid. Bring to a boil.
Dissolve lemon and lime gelatin. Chill in refrigerator until it jells slightly. (30-45 minutes)
Add and mix remaining ingredients to chilled gelatin. Chill again.
