Pineapple Bars
- 2 cups granulated sugar
- ½ cup butter
- 4 large eggs
- 1½ cups sifted all purpose flour
- ½ tsp. salt
- ½ tsp. baking soda
- 1 No. 2 can crushed pineapple, well drained
- ¾ cup chopped walnut meats or your choice
- Powdered sugar
Measure sugar into mixing bowl. Melt butter and add to the sugar. Mix together. Beat the eggs well and mix with the sugar and butter mixture. Add sifted flour, salt and baking soda. Add well drained pineapple and chopped nut meats.
Mix well. Pour batter into a well greased and lined pan (10½x15x2 inches.)
Bake in moderate oven 350 degrees for 30 to 35 minutes. Remove from oven and cool.
Cut into bars 1×2½ inches. Sift powdered sugar over bars.
Special Note: These bars freeze nicely, only do not sift powdered sugar over them until thawed out and ready to serve.
