Pineapple Filled Bars

Filling:

  • ¼ cup sugar
  • 1½ tsp. cornstarch
  • 1½ cup crushed pineapple
  • 3 tsp. guava jam

Blend sugar and starch. Stir into pineapple with jam. Cook and stir over low heat until clear and thick. (Allow to cool while making crust.)

Crust:

  • 1½ cup sifted all purpose flour
  • ½ tsp. soda
  • ½ tsp. salt
  • 1½ cup uncooked rolled oats
  • 1 cup brown sugar
  • ¾ cup shortening

Sift together flour, soda and salt. Mix with oats and brown sugar. Work in shortening until mixture is crumbly. Put one half of this mixture into 9 inch square pan, then spread and press filling onto this first layer. Sprinkle remaining crumbly mix as top crust. Bake at 375 degrees oven for 40 minutes. Cool in refrigerator until firm. Cut into bars or squares.
