Mint Brownies

  • ½ cup butter
  • ¼ cup molasses
  • 1 cup sugar
  • 2 eggs
  • ¼ tsp. salt
  • ¾ cup sifted all purpose flour
  • ½ cup chopped walnut meats
  • ½ tsp. vanilla
  • 16 chocolate peppermint patties, broken

Melt butter in saucepan over low heat. Remove from heat and cool. Add molasses and sugar and mix well. Add eggs, one at a time, beating after each addition. Sift flour and salt together, add along with nut meats and vanilla; mix well. Line an 8×8 inch pan with wax paper; grease. Pour ½ of mixture into pan. Sprinkle with Mints; cover with remaining batter. Bake at 350 degrees for 40 minutes or until toothpick inserted in center comes out dry. Cool 5 minutes, remove from pan and cut into 16 squares.
