Pickled Mango with Li-Hing Mui
- 4 cups water
- 2 cups vinegar (sushinomoto)
- 3 cups sugar
- 1/4 cup Morton salt
- 1 large pkg. li-hing mui seed
- 12 Hayden mangoes (more if small)
Boil first 4 ingredients and let cool. Slice mangoes and mix with li-hing mui. Combine with vinegar mixture and boil.
