Okoshi (Puffed Wheat or Cereal Squares)
- 8 cups puffed wheat
- 1 block butter
- 1 cup sugar
- ¼ cup peanuts
OR
- 1 box puffed wheat usually has 10 cups so use 1 box
- 1¼ blocks butter and
- 1½ cups sugar
- ½ cup peanuts
Heat puffed wheat and peanuts in oven at (200º). Melt butter, add sugar and cook over medium heat until sugar just begins to carmelize (light brown in color). (Be sure to use a heavy pot large enough to hold the wheat). Add the wheat and peanuts and mix. Place in a greased jelly roll pan and press with greased glass tumbler. Cut while still warm and cool.
