Mixed Vegetable Pickles

  • 2 cucumbers
  • 2 med. round onion
  • 1 med. carrot
  • 1/2 lb beans
  • 2 bell peppers
  • 1 small daikon
  • 1/2 lb cauliflower
  • 1/4 lb celery
  • 1 c salt (Coarse)
  • 2 c water

Slice vegetables 1/4 inch thick and combine with salt and water. Let stand overnight and drain.

  • 3 c vinegar
  • 3 c sugar
  • 1/3 c mustard seed
  • 1 T celery seed
  • 1/2 tsp cayenne

Combine and bring to boil. Boil three minutes. Add vegetables and bring to boiling point on high heat, then cook for 3 minutes. Pack into sterilized jars and seal at once.
