Mini Rice Balls

  • 3 cups rice
  • 3 cups water
  • 1 pkg. roasted nori, cut in quarters
  • Furikake nori

Garnish:

  • Umeboshi
  • Takuwan
  • Pickled vegetables

Cook rice in usual way. Sprinkle furikake nori and fold into rice. Scoop a heaping tablespoon of rice; form ball. Place ball of rice in center of nori. With the nori and rice in the palm of your hand, bring 4 points of the nori together around rice. Adjust nori in covering rice ball. Turn rice ball around and cut a cross with a sharp knife. Place a small piece of umeboshi (or any garnish you desire) in the center of the cross. Yield: 18 rice balls.

VARIATION: Rice may be seasoned with sushi seasoning instead of furikake.
