Microwave Bran Muffins

  • 5 c. flour
  • 2-1/2 c. sugar
  • 5 tsp. baking soda
  • 2 tsp. salt
  • 4 eggs
  • 1 qt. buttermilk
  • 1 c. oil
  • 16-oz. Quaker unprocessed bran (Oat Bran)

In a large bowl, mix well the flour, sugar, baking soda and salt. In a larger bowl, beat eggs and blend in buttermilk. Add dry ingredients to wet ingredients. Mix in oil and Oat Bran. Spoon batter 1/2 full into foam cups (cover with Saran Wrap). Microwave 1 to 1-1/2 minutes on High (uncovered). Covered batter will keep in refrigerator up to 6 weeks.
