Manju (Steamed Cakes)

  • 3 cup flour
  • 1 cup sugar
  • 4½ tsp. baking powder
  • ¼ tsp. salt
  • ½ cup milk
  • ¼ cup salad oil
  • 3 egg white
  • 1½ cup tsubushi-an (bean paste)

Combine first four ingredients and mix thoroughly. Combine milk, oil and egg whites, add to dry ingredients and mix well. Shape dough into small round balls – using one tablespoon dough.
Flatten dough to form circles. Place a teaspoon of tsubushi an (bean paste) in center of each circle and pinch edges together to seal. Place in steamer lined with wax paper. Steam 15 minutes. Yield three dozen.
