Macadamia Cake

  • 1-1/2 cup flour
  • 1/2 cup oatmeal
  • 2 cups brown sugar
  • 1 tsp vanilla
  • 1 block butter or margarine
  • 1 egg
  • 1 tsp baking soda
  • Buttermilk, enough to make 1 cup when combined with egg and soda

Topping:

  • 1/2 cup angel flaked coconut
  • 1/2 cup macadamia nuts, chopped
  • 1/2 cup maraschino cherries, chopped

Combine flour, oatmeal, brown sugar, vanilla and butter. Mix until crumbs are formed like cornmeal. Set aside 1/2 cup of mixture for topping. Put egg and soda into measuring cup and add buttermilk to make 1 cup; add to flour mixture and beat until well mixed. Pour into greased and floured 9×13-inch pan. Sprinkle with the 1/2 cup reserved flour mixture, followed by the coconut, macadamia nuts and maraschino cherries. Bake in 350 degree oven for 30 minutes.
