Lemon Kanten

  • 3 white kanten
  • 4½ cups water
  • 4 cups sugar
  • 1 cup lemon juice
  • Grated lemon rind

Rinse kanten, squeeze out water, tear in pieces, and soak in water for 30 minutes. Then cook until kanten is dissolved. Add sugar and bring to a boil. Remove from heat, add lemon juice and rind. Pour into baking pan to cool and set.
