Okoko (Base for Pickling Vegetables)

Soak a few slices of old bread in water. Add salt (Hawaiian) and mix. Add a little gourmet powder and sugar. Mixture should be slightly salty. Soak cabbage.
When using daikon, cut in half lengthwise and soak.
Keep the mixture in a covered jar in the refrigerator. Bread and seasoning may be added to the old base from time to time.
VARIATIONS: Makina, egg plant, cucumber may be used.
