Lemon Cake Pie

  • 1/4 cup butter or margarine
  • 1 cup sugar
  • 3 T. flour
  • 1/4 tsp. salt
  • 3 eggs, separated
  • Juice rind of 1 lemon
  • 1 cup milk

Cream butter & sugar together. Add flour & salt; blend well. Add lemon juice. Beat egg yolks slightly, add milk & combine with creamed mixture. Pour into an unbaked 9″ pie shell. Bake at 400° for 10 min. then reduce heat to 325° and bake for 25 min. longer.
