Lemon Bars
Sharon Shimizu Nomura, Class of 1965
- 1 cup butter
- 1-3/4 cups flour
- 2 cups powdered sugar
- 4 eggs
- 1/4 cup flour
- 1/2 tsp baking powder
- 1/3 cup powdered sugar
- 1/3 cup lemon juice
Cream butter, add sugar, then flour. Press lightly in 9×13-inch pan. Bake in 300 degree oven for 15 minutes. Cool. Mix eggs with sugar; add dry ingredients, lemon juice. Pour over baked pastry and bake 25-30 minutes in 300 degree oven. Let cool and sprinkle with powdered sugar. Cut into bars.
