Kurt’s Favorite Spam Casserole

• 2 cans of Spam – grated
• 1 – 17 oz. creamed corn
• 1 – 17 oz. regular corn
• 1/2 round onion, diced
• 1/2 cup milk
• 1/2 cup rolled oats (Oatmeal – not instant)
• 2 eggs
• Pepper to taste
• No salt
• 1 1/2 –2 medium potatoes, sliced

Mix first eight ingredients together.

Spray 9 x 13 glass baking pan with vegetable oil. Pour half of the mixture in the bottom of the pan. Top the first layer with the sliced potatoes.

Pour the remaining Spam mixture over the potato layer. Cover the pan with foil and bake for 1 hour at 375 degrees.

Let cool for about 10 minutes. Slice into squares and serve.
