Hiya Somen (Cold Somen)

- 1 pkg. Somen
Cook somen in about 2 qts. of boiling water for 3 min., and drain. Let stand in cold water—preferably ice water.
Dashi
- 3½ cups shrimp stock
- ½ cup shoyu
- 2 tablespoons sugar
- 1 teaspoon salt
- ½ teaspoon gourmet powder
Bring to a boil and cool.
Yakumi
- 1 grated daikon
- 2 stalks green onions chopped fine
- 1 sheet nori toasted and crushed into flakes
Pour dashi into small bowls. Add grated daikon, nori flakes and chopped green onion to suit individual taste. Eat by dipping somen in the sauce.
Noodles and soba may be prepared in same way.
