Grandma’s Buttered Chicken

  • 2 lbs chicken (thighs preferably)
  • 1 pkg bread crumbs
  • 4 eggs, scrambled
  • 2-3 blocks butter, melted

Preheat oven to 350 degrees. Salt and pepper chicken on both sides. Line 9×13 pan with foil. Pour melted butter on pan bottom, enough to cover bottom. Do not pour all, save some for last.

Dip chicken in scrambled eggs and dip both sides in bread crumbs and line in buttered pan nicely. Do not pack tightly. If needed, use another pan. Take some remaining bread crumbs and sprinkle on chicken. Take remaining butter and pour over chicken.

Bake for 1/2 hour and turn chicken over; bake for 1/2 hour more. After 1 hour, turn again for about 3-5 minutes more.
