Fresh Yam with Orange and Lemon

  • 3 lge. or 6 med. yams, unpeeled
  • 1/2 lemon, sliced
  • 1/2 orange, sliced

SYRUP:

  • 1/2 cup light brown sugar, packed
  • 1/4 cup sugar
  • 1/4 cup (1/2 block) margarine
  • 1/3 cup water
  • Dash of salt
  • Dash or more of cinnamon

Scrub yam and parboil for 15 to 20 minutes. Combine syrup ingredients in sauce pan and boil for 5 minutes. Slice yam diagonally, about 1/2 inch thick. Peel, if preferred. Place yam in casserole, sprayed with nonstick spray. Top with lemon and orange slices. Pour syrup over yam. If desired, sprinkle a little cinnamon. Bake at 350° for 45 minutes. Baste occasionally.
