Pumpkin, Japanese Style

  • 1 lb. pumpkin
  • 1 cup dashi (stock)
  • 2 Tbsp. sugar
  • 1 Tbsp. mirin
  • 1 1/2 Tbsp. soy sauce

Cut pumpkin in half; remove seeds. Wash pumpkin and cut into 2-inch squares. Place pumpkin, skin side down in heavy 3 quart pot. Combine dashi, sugar and mirin and pour over pumpkin. Cover; heat to boiling over medium heat. Boil 5 minutes. Add soy sauce and continue boiling, covered, for 5 minutes longer. Serve hot or at room temperature.
