Fresh Cranberry Relish

  • 1 orange
  • 2 cups sugar
  • 1 cup water
  • 1 pkg. (1 lb.) fresh cranberries

Grate orange rind. Peel orange; chop or blend. Combine sugar, water, cranberries, grated orange rind and orange. Bring to a boil. Then simmer covered, for 20 to 25 minutes until cranberry skins pop. Cool and refrigerate. Keeps in refrigerator indefinitely. May be frozen. Serve with turkey or ham. Yield: 4 cups.
