Fresh Grated Coconut Cookies
- 1 lb. butter (or 2 sticks butter and 2 sticks of margarine)
- 2 cups white sugar
- 1 tbsp. vanilla
- 3 cups grated coconut (fresh)
- 4 cups all purpose flour (spooned in measuring cup)
- ¼ tsp. salt
Cream butter and sugar well, add vanilla and coconut. Sift flour with salt and add to creamed mixture. Chill dough for easy handling and roll dough into four rolls. Wrap well in wax paper, when firm cut into ¼” slices, peel off wax paper and bake on ungreased cookie sheet at 325 degrees F. until light brown. Remove to cooling racks, when cool, place in cookie containers. Makes one gallon.
*Cookie dough rolls maybe frozen to bake at a later date.
