Bico (Sweet Rice)

  • 5 cups mochi rice
  • 1 box dark brown sugar
  • 1 can coconut milk
  • 1 block butter

Optional:

  • 1 Tbsp. instant coffee

Wash rice in rice cooker and add water like ordinary rice. Mix 1/2 box brown sugar with the rice and water, then turn rice cooker on.

While the rice is cooking, put the coconut milk in a pot with the butter and remaining brown sugar and stir till it boils. Then add coffee for darker coloring if you want.

After rice is cooked, combine and mix it with the brown sugar mixture. Place in a square aluminum pan and bake at 350º for 20 minutes.
