Fresh Berry Pie

  • 1 8 inch baked pie shell
  • 1 c. sugar
  • 4 tsp. cornstarch
  • pinch of salt
  • 1 c. boiling water

Blend sugar, cornstarch, salt and boiling water. Cook until thick and clear, stirring constantly. Remove from heat. Stir in butter and lemon juice, 1 Tbsp. each.

Prepare 2 c. fresh berries (strawberry, blackberry or others) sliced or whole. Fold carefully into cornstarch mixture. Pour into pie shell. Serve with ice cream or favorite whipped topping. This recipe will fill 3 – 4 tart shells.
