Flaming Delectable Sauce

CLASS OF 1949

  • 1/2 cup sugar
  • 1 cup orange juice
  • 2 cups pared and cubed fresh pineapple
  • 2 bananas, sliced
  • 1/3 cup light rum
  • Vanilla ice cream or pineapple sherbet

To caramelize sugar, heat and stir till sugar is melted over low heat in large heavy skillet. When mixture is golden, remove skillet from heat and slowly stir in orange juice. Heat, stirring constantly, till caramelized sugar is dissolved. Simmer, uncovered, for 8-10 minutes. Gently stir in pineapple and banana; heat till mixture is warm. In small saucepan or ladle, heat rum; flame. Pour flaming rum over pineapple mixture. Serve immediately over scoops of ice cream.

Yield: 8-10 servings
